Over the weekend on of my quarantine activities, aka me trying to find something to do without going stir crazy, was baking gluten free and dairy free banana bread! It turned out SO good and is the perfect use for some too ripe bananas!
INGREDIENTS
2 large ripe bananas
2 eggs
2/3 cup melted vegan butter
1 Tbsp vanilla extract
3/4 cup vanilla almond milk
1 cup white sugar
2 cups gluten free flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Directions
1. Preheat oven to 350.
2. Using electric mixer (I used an upright kitchen aid mixer) mash bananas.
2. Add in the rest of ingredients and mix together well.
3. Grease 2 loaf pans.
4. Evenly divide the batter between the pans.
5. Bake for ~45 minutes, until you can stick a tooth pick into the center of the bread and it comes out completely clean.
